Josefina Cassiani is a traditional cook from Barranquilla. Her veins run with ancestral knowledge, and she knows the secrets hidden in the textures and fusions behind this dish. Although she knows how to create and explore many things in the kitchen, Cassiani is a true exponent of the Barrio Abajo Guandú Sancocho, a dish that speaks of Colombia, which is described as “the flavor that gives strength for Carnival days” and which earned her the National Gastronomy Award in 2007.
